Preparation:

Step 1:
Put the rice in a bowl and soak in cold water for about 30 minutes. Strain and wash off with cold water.
Step 2:
Put the milk with saffron and sugar in a pot. Add cardamom with cloves and cinnamon to the milk and bring to a boil.
Step 3:
As soon as the milk begins to boil, stir in the rice and simmer, covered, over low heat for about 20 minutes, stirring regularly.
Step 4:
Meanwhile, finely chop the almonds and add to the rice. Stir rose water into the rice pudding, season to taste and divide into bowls. Garnish with the chopped pistachios and serve.
