Ingredients:

Preparation:

Step 1:
Put soy milk with coconut blossom sugar in a saucepan, cover and bring to a boil. Sprinkle in the round grain rice and bring to the boil while stirring. Leave the rice to soak for about 30 minutes over medium heat with the lid halfway down, stirring occasionally. Keep an eye on the rice, otherwise it will burn easily on the bottom of the pot.
Step 2:
In the meantime, strain the apricots and cut them into narrow strips or cubes. Peel kiwi and also cut into bite-sized pieces.
Step 3:
Mix orange juice with the agave syrup in a bowl. Add apricot and kiwi pieces and let them steep in the mixture until the rice is ready.
Step 4:
Pour the finished rice pudding into a small bowl and top with the marinated fruit. Enjoy rice pudding warm.
