Preparation:

Step 1:
Wash the cauliflower well and divide into florets. Cook in about 250 ml of boiling salted water, then cover and cook over medium heat for about 6 min. After cooking time, drain the cauliflower and rinse with cold water.
Step 2:
Grate the Gouda and whisk with the egg and cream cheese. Put the cauliflower in a blitz chopper (if you don't have one, chop it very finely with a knife) and then add it to the egg-cheese mixture. Season with salt, pepper, nutmeg and turmeric to taste and finally add the psyllium powder and stir in briskly. Now let the mass swell for about 10 min.
Step 3:
In the meantime, wash the iceberg lettuce well and cut into strips. Mix the olive oil, vinegar, mustard and salt and pepper to make a dressing. Mix the iceberg lettuce with the dressing and set aside.
Step 4:
Heat the coconut oil in a frying pan and form evenly sized patties from the cheese and cauliflower mixture and fry them on both sides for about 4 minutes. Then remove and drain on a paper towel. Serve the planters with the iceberg lettuce and enjoy.
