Preparation:

Step 1:
For the zucchini salad, wash the zucchini well and remove the stalk. Then grate finely on a vegetable grater and mix in a bowl with the vinegar, mustard, half of the olive oil and thyme and season with salt and pepper. Leave to infuse well in the refrigerator until ready to serve.
Step 2:
For the salsa, wash the tomato well, remove the stem and stalk and dice finely. Cut open the papaya, remove the seeds and remove the flesh from the peel, also finely dice. Peel the onion and finely dice it as well. Cut the chili pepper in half lengthwise, remove the seeds and the stalk and dice finely. Now mix all the vegetable cubes with the ajvar and season to taste with salt and pepper.
Step 3:
Now heat remaining olive oil in a coated pan. Fry the halloumi in it for 2 min on each side until golden brown.
Step 4:
Finally, arrange the zucchini salad on a plate, place the fried halloumi on top and top with the papaya tomato salsa. Serve and enjoy.
