Ingredients:

Coconut flakesCoconut flakes 1 Teaspoon
Erythritol, sugar substituteErythritol, sugar substitute ¼ Tablespoon
Water, tap waterWater, tap water 100 ml
Vanilla beansVanilla beans¼ (0,75 g)
Chia seeds (dried)Chia seeds (dried) 15 g
Coconut milk (canned, creamy)Coconut milk (canned, creamy) 50 ml
Almond leaves (tender)Almond leaves (tender) 1 Tablespoon
Berries (mixed)Berries (mixed) 1 Teaspoon

Preparation:

Step 1:
Pour the coconut milk into a small saucepan along with 100ml of water. Scrape out the vanilla bean and add to the other ingredients in the pot. Now simmer the whole thing over medium heat for about 5 minutes, stirring again and again.
Step 2:
Then remove the pan from the heat and pour the mixture into a bowl and place it in the refrigerator for about 10 minutes so that the mixture cools down faster.
Step 3:
In the meantime, mix well the chia seeds, flaked almonds and coconut flakes.
Step 4:
After 10 min, remove the coconut milk mixture from the fridge, mix well with the chia-almond-coconut mix and the erythritol and let it sit in the fridge for another 10 min.
Step 5:
Meanwhile, wash and drain the berries well. After the infusion time, remove the chia pudding from the refrigerator and top with the berry mix and enjoy.
