Preparation:

Step 1:
For the basil butter, wash the lemons hot and grate the peel. Wash the basil leaves thoroughly, drain and chop finely. Beat the butter either with a hand mixer in a bowl until smooth or if you don't have one use a whisk. Now mix the smooth butter with the lemon zest and the chopped basil and season with salt and pepper to taste. Put in the refrigerator until serving.
Step 2:
Wash the peppers well, remove the stalk and remove the seeds. Then cut into cubes. Also wash the tomatoes well, remove the stems and stalks and cut into quarters. Peel and finely dice the onion.
Step 3:
Now season the pork tenderloin on both sides with salt and pepper. Heat the coconut oil in a non-stick frying pan and fry the medallions on both sides for about 3-4 minutes over high heat.
Step 4:
Now heat the olive oil in an extra frying pan and sauté the onion cubes for about 1 minute until translucent. Then add the diced peppers and fry for another 2 min. Add cherry tomatoes and garlic and season with salt and pepper to taste and mix well. Cook for another 2 min and then arrange the vegetables on a plate. Place the pork medallions on top and garnish with basil butter. Enjoy.
