Step 1:
Chop cauliflower into small pieces and then place in a food processor or stand mixer and finely grate until small rice-like shreds are formed.
Step 2:
Put cauliflower rice, sambal olek, coconut milk and onion powder in a pot and mix well. Simmer over medium heat with the lid on for about 5 minutes, stirring regularly.
Step 3:
Meanwhile, wash the spring onion and cut into fine rings.
Step 4:
Remove the lid from the pot and simmer until the excess liquid has evaporated. The cauliflower rice should now be creamy and soft. Then season with salt and arrange on a plate. Sprinkle with the fresh spring onions.
