Preparation:

Step 1:
Clean the Brussels sprouts (remove the stalk and the outer leaves). Cook in salted water until firm to the bite and then drain. Cut in half and set aside.
Step 2:
Preheat oven to 140 °C. First make a pan very hot, only then add the clarified butter. Sear fillet in it for about 2 minutes on each side, so that a nice browning and crust is formed. Then either wrap in aluminum foil or place in the oven with the pan and let sit (for medium still 6-8 minutes, for well done 8-10 minutes).
Step 3:
Finely chop onion. Heat oil in a frying pan. Sauté Brussels sprouts and onions in it and season to taste with salt and pepper. Remove the steak from the oven and season with pepper and salt. Serve together with the Brussels sprouts.
