Step 1:
Thoroughly wash the potatoes, brush if necessary. Put potatoes in a saucepan and fill with water until potatoes are covered. Add salt to the water. Cover the potatoes and bring to the boil and cook for about 20-25 minutes (cooking time varies depending on the size of the potatoes).
Step 2:
Drain the potatoes and rinse with cold water and, if necessary, leave to cool briefly. Peel potatoes while warm and then leave to cool. Wash and finely chop the parsley.
Step 3:
Peel and finely dice the onion. Cut potatoes into slices about 5mm thick. Heat rapeseed oil in a pan and fry the bacon cubes in it. Add the potatoes and season with salt and pepper to taste. Fry potatoes over medium heat, turning occasionally, until golden brown. Add diced onion and fry for another 5-10min.
Step 4:
Beat egg in a non-stick frying pan and fry on one side or both sides according to taste and season with salt.
Step 5:
Arrange fried egg and fried potatoes on a plate and sprinkle with butterfly.
