Preparation:

Step 1:
Boil the potatoes in a pot for 20-30 minutes. Then drain, rinse with cold water and peel while they are still hot.
Step 2:
While the potatoes are cooling, peel and finely dice the onion. Wash the arugula and shake dry. Clean the radishes, wash and cut into thin slices. Wash and chop the herbs.
Step 3:
Cut the potatoes into slices. In a large bowl, mix with hot vegetable broth, onions, olive oil, vinegar, salt and pepper. Leave to infuse for at least 30 minutes.
Step 4:
Fold the chopped radishes, herbs and arugula into the potato salad and season to taste with salt and pepper.
