Preparation:

Step 1:
Finely chop the garlic and add the lime zest. Season with salt and pepper. Mix the whole with half of the (slightly warmed) coconut oil.
Step 2:
Heat large pan over medium heat. Turn fish fillet in the dressing and bake on both sides for 3 to 4 minutes until golden brown.
Step 3:
Warm the remaining coconut oil a little and mix with the lime juice. Mix the spinach with the dressing in a large bowl. Season with salt and pepper and serve with the fish.
