Preparation:

Step 1:
Rinse millet well and drain. Peel and finely dice the onion. Now heat the oil in a saucepan and sauté the onion cubes until translucent. Then add the millet and fry it briefly with. Deglaze with the vegetable stock and bring everything to the boil briefly. Cook for about 8 min over medium heat, covered. Then put the millet in a bowl and leave to cool slightly.
Step 2:
Wash and clean the cauliflower well, cut it into florets and slice the stalk if necessary according to taste. Now fill a large pot with about 1 cm of water. Add a little more salt and heat. Now add the cauliflower and cook for about 3-4 min (the cauliflower should not fall apart). Then drain, rinse and drain well.
Step 3:
Preheat the oven to 180°C. Grease a small baking dish with a little oil. Whisk the soy cream well together with the egg and chervil and mix with the millet. Season vigorously with salt and pepper.
Step 4:
Now carefully mix the cauliflower with the millet mixture and pour everything into the baking dish. Finally, sprinkle with crumbled feta and bake the casserole on the lowest rack for about 20 minutes.
Step 5:
Remove from the oven, allow to cool briefly, arrange and enjoy.
