Preparation:

Step 1:
250 ml boiling salted water bring to a boil. Add brown rice, stir and cook over low heat in a closed pot for 25-30 minutes. If necessary, pour off remaining water. Then briefly loosen rice in the pot and let it swell for a few more minutes in the closed pot. Then loosen with a fork and let cool for 15 minutes.
Step 2:
In the meantime, wash and finely chop the spring onions and cucumbers. Herbs wash, shake dry and chop. Plum (yellow or red) wash, stone and cut into wedges. Thyme wash, shake dry and pluck off leaves.
Step 3:
Heat some olive oil in a pan, add plums and sauté for 2 minutes. Add half a teaspoon of agave or apple syrup and thyme and let caramelize for 2 minutes. Pour plums into a bowl and leave to cool.
Step 4:
For the dressing chop walnuts. Mix walnut oil and remaining olive oil with balsamic vinegar, remaining agave syrup and mustard. Season with salt and pepper and mix in half the walnuts. Mix rice with spring onions, cucumber and herbs, pour over the dressing. Spread the plums on top and sprinkle with the remaining walnut kernels.
