Preparation:

Step 1:
Cook rice in a pot or with a rice stove. Fill small pot with rice. Add two parts water (example: 50g rice = 100ml water). Briefly bring to a boil and then reduce directly to low heat. Simmer gently without a lid until the water has evaporated.
Step 2:
Meanwhile, wash, clean and peel the carrot. Clean, quarter, seed and rinse the bell pepper. Finely chop cashews. Coriander wash and shake dry.
Step 3:
Cut bell bell pepper and carrot into fine strips. Peel and finely grate the ginger. Peel and crush garlic clove. Rinse the mung bean sprouts under cold water and drain them. Lime wash and cut into small pieces. Whisk egg with soy sauce in a bowl.
Step 4:
Heat 1 tsp oil in a frying pan and fry the egg mixture in it, remove and break into small pieces with 2 forks. Then wipe out pan and add the remaining oil to the pan. Add garlic, ginger, strips of bell bell pepper and carrots. Fry for 2-3 minutes, turning frequently.
Step 5:
Add drained rice with the mung bean sprouts to the vegetables and fry for another 2-3 minutes. Mix shrimp and egg into the rice and heat everything again well. Season with salt, pepper and if desired additionally some chili powder. Pluck off the coriander leaves, sprinkle over the rice with the nuts and garnish with lime pieces.
