Preparation:

Step 1:
Put the rice in a saucepan with twice the amount of salted water so that the rice is covered with water, bring to the boil and leave to swell over a low heat for about 15-20 minutes.
Step 2:
Wash the peppers, quarter them, remove the seeds and cut them into bite-sized pieces. Wash and pat dry the tomatoes and also cut into bite-sized pieces. Drain the kidney beans and the chickpeas, rinse and drain them. Bring salted water to a boil in a pot. In the meantime, wash the green beans and then cook them in the hot water for about 6 minutes. Drain the hot water, rinse with cold water and drain. Peel and finely dice the onions and garlic.
Step 3:
Heat the olive oil in a pan. Beans and peppers added and sauté for 2-3 minutes. Add the onions and garlic and fry them. Add the kidney beans and broth, bring to a boil, then add the peas. Fold in the rice and let it sit for 2-4 minutes over medium heat. Add the tomatoes and heat briefly. Season with salt and pepper. Rinse the lemon hot, clean dry and grate the peel. Mix in 1/4 tsp of the lemon zest and the herbs.
