Preparation:

Step 1:
Drain, rinse and drain the beans and place in a bowl. Add hemp seed flour, soy drink, almond paste and spices and mix with a hand blender to a soft dough. Fold in the oat flakes and hemp seeds, salt and pepper. Form the dough into 3 small balls with wet hands and bake in a preheated oven at 200 °C (convection oven 180 °C, gas mark 3) for about 15-20 minutes until golden brown. Turn once after half the time.
Step 2:
Meanwhile, clean Brussels sprouts, remove outer leaves, wash and cut in half. Peel the carrots and cut them diagonally into thin slices. Heat olive oil in a pan. Add Brussels sprouts and sauté in it over medium heat for 3 minutes. Add carrots and steam for 2 minutes. Season with salt and pepper.
Step 3:
In the meantime, peel the orange, cut it in half and cut the flesh into fillets, squeeze the other part of the orange. Chicory and Chinese cabbage, wash, shake dry and cut into fine strips. Mix with remaining oil and orange juice, season to taste with salt and pepper.
Step 4:
Fill salad into a bowl, add hemp seed balls, Brussels sprouts, carrots and orange fillets on top and sprinkle with remaining hemp seeds.
