Preparation:

Step 1:
Preheat the oven to 200°C (convection oven) and provide a baking tray with baking paper. Now cut the mozzarella into small pieces and put them in a high mixing bowl together with the eggs and the rapeseed oil. Now season the whole thing with tomato paste, salt and pepper and mix thoroughly with a blender until a lump-free mass is formed.
Step 2:
Now wash the basil thoroughly, dab dry and chop finely and stir together with the psyllium husks into the pureed egg mixture.
Step 3:
Spread the egg mixture on the baking tray covered with baking paper (rectangular shape, like the shape of the baking tray) and bake on the middle shelf for about 4 minutes. Then prick the dough sheet several times with a fork and bake for another 4 min. Then remove the dough from the oven and cut the mixture into 2 rectangular patties of the same size and leave to cool well for 5 min.
Step 4:
In the meantime, toast the pine nuts in a non-stick frying pan without fat until golden brown and then let them cool down. Finely chop the tomatoes and wash and drain the arugula well. Finely shave the parmesan.
Step 5:
Finally, spread the cooled dough patties with cream cheese, top with the pine nuts, sun-dried tomatoes, Parmesan cheese and arugula and roll up. Now enjoy wraps whole or cut in half.
