Preparation:

Step 1:
Preheat the oven to 200°C top/bottom heat (convection oven: 180°C). Cover a baking tray with baking paper. Briefly toast the toast slices in the toaster or in a pan. Wash and slice the tomato. Drain the mozzarella and cut into slices as well.
Step 2:
Spread the toast slices with a little pesto. Then cover with the tomato slices and then spread the mozzarella on top. Drizzle a little pesto on the mozarella.
Step 3:
Place the toast slices on the baking tray and bake in the preheated oven for about 7-9 minutes, until the mozzarella has melted slightly. Season with salt and pepper before serving.
