Step 1:
Preheat oven to 180° Celcius convection oven. Wash the zucchini, cut in half and scrape out the inside with a teaspoon. Place zucchini halves in a small baking dish and brush each with a little olive oil (remaining oil is still needed). Now pre-bake in the oven for about 15-20 minutes.
Step 2:
In the meantime, wash the spring onions and cut into fine rings. Wash and quarter tomatoes.
Step 3:
Mix Greek yogurt in a small bowl with paprika powder, salt and pepper and a little olive oil.
Step 4:
For the crust, wash and finely chop the parsley. Grate the Gouda and chop the walnut kernels. Mix parsley, cheese and walnuts in a small bowl.
Step 5:
Heat a little oil in a frying pan. Briefly fry minced meat and spring onion rings until hot (do not fry through). Season with salt, bell pepper, paprika powder and cumin, then stir in soy sauce and tomato paste.
Step 6:
Remove the casserole dish with the zucchini halves from the oven and fill each first with the yogurt sauce, then with the minced meat. Spread each tomato on top and sprinkle with the cheese and nut mixture. Put back in the oven and bake for about 15min.
Step 7:
Serve and enjoy.
