Preparation:

Step 1:
Preheat oven to 200° C top-bottom heat. Wash, cut and seed the peppers, then dice them. Wash and finely chop the chives.
Step 2:
Beat eggs in a bowl and whisk with a fork - season with a little salt and pepper. Grate the Gouda and add to the egg mixture. Mix in diced peppers and chives as well.
Step 3:
Now brush the inside of a muffin baking pan with a little grease and put a rim from the inside of each with a slice of bacon. Now divide the egg mixture between the muffin tins and fill in the bacon rim (depending on the size of the muffin baking tin, this will make 2 large or 4 small muffins). Bake in the preheated oven for about 15 min until the egg muffins are golden brown. Remove, serve and enjoy.
