Step 1:
Hard boil eggs in boiling water in about 10min. Quench ice cold, remove the skin and cut in half. Arrange on a plate.
Step 2:
Mix sour cream, creme fraiche and chives and season to taste with salt, pepper and paprika. Now top the eggs with the finished cream and enjoy.
