Preparation:

Step 1:
Whisk the eggs and cream together in a bowl. Dice the mozzarella, peel and finely chop the onion, wash and finely chop the chives. Set aside.
Step 2:
Heat half a tablespoon of butter in a non-stick frying pan and fry the bacon cubes until crispy, then set aside.
Step 3:
Add the remaining butter to the same pan and let the egg mixture set at medium temperature for about 4-5 minutes.
Step 4:
Add the mozzarella and onions to the egg mixture and cook for another 5 minutes until the cheese melts. After the egg mixture is completely set, season with salt and pepper to taste. Turn the omelet once for about 1 min and fry it from the other side, then fold it and put it on a plate.
Step 5:
Finally, spread the crispy bacon cubes and the chive rolls on the omelet and enjoy.
