Preparation:

Step 1:
Squeeze half lemon. Cut avocado in half, remove stone and scoop out flesh with a spoon. Finely mash avocado flesh with a fork, mix in 2 tsp lemon juice and season with salt and pepper. Wash the turkey cutlets, pat dry thoroughly with kitchen paper and season on both sides with salt and pepper.
Step 2:
Heat olive oil in a large frying pan. Fry turkey cutlets over medium heat for about 4 minutes on each side.
Step 3:
In the meantime, wash the tomatoes, cut out the stalks and cut the tomatoes into slices. Slice open whole wheat rolls and spread avocado mousse on the bottom half of each roll. Spread turkey cutlets, tomato slices and lettuce on top and place top half of bun on top.
