Preparation:

Step 1:
Peel and finely chop the garlic and onion. Chives wash, shake dry and cut into fine rolls. Wash the turkey cutlets, dab dry and season with pepper.
Step 2:
Heat a little oil in a frying pan. Sear turkey cutlets on both sides over very high heat. Then remove from the pan, salt, wrap in aluminum foil and let rest. Sauté the onion and garlic in the pan, stirring over medium heat. Add pepper and deglaze with brandy or cranberry juice. Add soy cream and boil down until creamy.
Step 3:
Add the cutlets and the gravy to the pan and bring to the boil once. Add the chives to the pan and season everything with salt and pepper.
