Preparation:

Step 1:
Cook rice in a pot or with a rice stove. Fill small pot with rice. Add two parts water (example: 50g rice = 100ml water). Briefly bring to a boil and then reduce directly to low heat. Simmer gently without a lid until the water has evaporated.
Step 2:
Wash chicken breast fillet well, drain and cut into bite-sized pieces. Place egg in a small bowl and whisk with pepper and salt. In another bowl, put 2 tablespoons of cornstarch and spread a little with a spoon.
Step 3:
Heat a pan with a little oil. Meanwhile, add the chicken breast to the starch and turn several times until completely covered. Then add this to the egg and also turn until completely coated with the egg.
Step 4:
Now add the egg-coated meat to the hot pan and fry it all around until it is done. Then place on a plate and set aside.
Step 5:
Drain the pineapple from the can and collect the liquid. For the sauce, put vinegar with sugar, salt, soy sauce, oil and ketchup in a bowl and mix. Clean the onion, halve and cut into fine rings. Sauté the onion in the pan where the chicken pieces were. Now cut the peppers into bite-sized pieces and add them with the pineapple to the onion and fry for 5 minutes. After everything is cooked, add the sauce and simmer everything for another 3 minutes on medium heat.
Step 6:
Mix the last 2 tablespoons of cornstarch with about 80 ml of pineapple juice and then add to the pan. Then put everything back on the stove and reduce the heat slightly. Now add the meat to the vegetables in the pan. Finally, put the rice on a plate and arrange the chicken and vegetables on it. Pour a little sauce over it.
