Preparation:

Step 1:
Cut red cabbage into fine strips. Then bring to a boil in a small saucepan with a little water and salt. Cook until the red cabbage is soft and the water has turned a nice blue-purple color.
Step 2:
Remove shiritaki noodles from package and rinse and drain thoroughly. Set finished red cabbage aside, save the blue red cabbage water!
Step 3:
Use the red cabbage water to cook the shiritaki noodles (as described on the package). The noodles turn blue in the process. Drain the finished pasta and divide into two groups. A group of noodles is sprinkled with a little lemon juice and mixed. In the process the noodles turn pink.
Step 4:
Remove the skin from the avocado and cut into slices.
Step 5:
Arrange a bowl with the two colored noodles and drizzle with sesamee oil. Then add the red cabbage and avocado and season with salt, pepper, garlic and chilli and top with pumpkin seeds.
