Preparation:

Step 1:
Rinse quinoa with hot water and drain. Then simmer in boiling broth for about 20 minutes on low heat. Remove pot from heat and let swell for another 5 minutes.
Step 2:
In the meantime, wash tomatoes, remove stalks and dice finely. Wash parsley and mint, shake dry and chop finely. Peel and finely dice the onion. Lemon wash hot, dab dry, grate the peel and squeeze out the juice.
Step 3:
Mix quionoa with tomatoes, herbs, 2-3 tbsp lemon juice, 1 tsp lemon zest and oil. Season with salt and pepper.
