Step 1:
Prepare quinoa as described on the package.
Step 2:
Clean mushrooms, peel onion and cut both into cubes.
Step 3:
Cut the turkey breast into small pieces and fry with half of the oil in a non-stick pan, season with salt and pepper and then remove and set aside. Reduce heat of the pan, add the remaining oil, mushrooms and onion and sauté. Deglaze with the water and soy cream. Add the meat again and let everything simmer.
Step 4:
Arrange quinoa, turkey breast and mushrooms on a plate and sprinkle with freshly chopped parsley.
