Step 1:
In a hot pan, toast the pine nuts without fat over medium heat for 3 minutes. Wash and halve the tomatoes. Cut the olives into rings. Pit the avocado, scoop out the flesh and dice it. Wash the basil, shake dry, set aside a few leaves and cut the rest into strips.
Step 2:
Season the cottage cheese with salt and pepper. Mix with tomatoes, olives, avocado, basil and lemon juice. Sprinkle with pine nuts and basil and serve.
