Bring the vegetable stock to the boil, add the bulgur and simmer, covered, over low heat for 5 minutes. Turn off the stove and let bulgur swell for another 5-10 minutes.
Meanwhile, quarter the peppers, remove the seeds, wash and cut into strips. Clean the spring onion, wash and cut into fine rings. Wash mint, shake dry, pluck off leaves and cut into strips. Halve lemon and squeeze juice. Halve avocado, remove stone, peel and dice flesh .
Then put pulp in a salad bowl and mix with 1 tablespoon lemon juice so that it does not turn brown. Add bulgur, paprika, mint and spring onions. Whisk remaining lemon juice, olive oil, honey, cumin, salt and pepper in a small bowl. Pour over the prepared ingredients and mix everything together. Season with salt and pepper.
Put the salad on a plate and crumble the feta cheese with a fork and sprinkle it over the top.
