Preparation:

Step 1:
Prepare the rice according to package instructions.
Step 2:
Meanwhile, wash the parsley and shake dry. Set some aside and finely chop the remaining parsley. Squeeze half of the limes and collect the juice. Loosen the cooked rice and mix in the chopped parsley and a little lemon juice.
Step 3:
Drain the beans and corn in a colander, wash and drain them. Wash the chili, remove the seeds and chop finely. Mix the beans, corn and chili with a little olive oil and season with pepper and salt.
Step 4:
Wash and quarter the cherry tomatoes. Peel the onion, halve and cut into rings. Mix tomatoes and onion rings with a little olive oil, lime juice, salt and pepper.
Step 5:
Wash the lettuce and cut into fine strips. Cut the avocado in half, scoop out the pit and scoop out the flesh with a spoon. Cut diagonally into strips. Peel the garlic and finely puree it with the yogurt, the remaining parsley, some lime juice, salt and pepper.
Step 6:
Put the rice, with the bean-corn mix, the tomatoes and lettuce in the bowl. Serve with yogurt and and avocado strips. Serve with parsley and lime wedges.
