Step 1:
Clean the cauliflower, wash it and grate it with the help of a grater. Mix the eggs with the grated cheese, psyllium husks, salt, pepper and oregano and leave to soak for about 10 minutes. Then mix with the cauliflower.
Step 2:
Spread the mixture into thin patties on a baking sheet lined with baking paper and bake in a preheated oven at 200 degrees (convection oven: 180 degrees) for about 10-15 minutes.
Step 3:
In the meantime, cut the goat cheese into thin slices. Wash the spinach and peel dry. Peel and finely slice the onions. Chop the walnuts.
Step 4:
Take the patties on the oven and spread the strained tomatoes on them. Top with goat cheese and onion rings and season with salt and pepper. Bake in the oven for another 15 minutes until golden brown. Sprinkle with spinach leaves and serve.
