Step 1:
Put the oatmeal in a large bowl and pour over twice the amount of water. Add 1 pinch of cinnamon and salt, mix and leave to swell for about 10 minutes.
Step 2:
Meanwhile, coarsely chop the walnuts. Wash the blackberries. Wash the pumpkin, remove the seeds and chop with a grater. Wash, halve, core and finely grate the apple as well. Add the oat milk, walnuts, blackberries, grated apple and pumpkin to the oatmeal and mix well.
Step 3:
Grease a baking dish with the melted coconut oil and spread the oatmeal-blackberry mixture evenly in it. Drizzle with honey and bake in a preheated oven at 180 degrees (convection oven 160 degrees) for 20-25 minutes.
