Preparation:

Step 1:
Clean the mushrooms and cut them into small pieces. Peel and finely chop the garlic and onions. Wash, clean and cut the carrots into small cubes. Wash and chop the celery.
Step 2:
Prepare the lentils as described on the package.
Step 3:
In the meantime, heat some oil in a saucepan. Sauté the mushrooms and onions over high heat for about 3 minutes and then add the carrots and celery. Sauté for another 3 minutes, reduce the heat and deglaze with the vegetable broth (alternatively red wine). Add the tomato paste and garlic and sauté over medium heat for about 1-2 minutes. Add the strained tomatoes and lentils to the sauce, mix everything well and let it simmer for another 5-8 minutes in the open pot.
Step 4:
Meanwhile, prepare the pasta according to package instructions. Grate the cheese, wash and finely chop the herbs. Season the lentil bolognese with salt and pepper and the chopped herbs.
Step 5:
Serve the pasta with the sauce and sprinkle with cheese.
