Preparation:

Step 1:
Prepare the rice as described on the package.
Step 2:
Meanwhile, rinse the lime(s) hot, slice half and squeeze the rest. Peel the ginger, cut half into slices and finely chop the rest. Clean the lemongrass from the bracts and chop finely.
Step 3:
In a large pan, bring 1l of water to a boil with the ginger and lime slices and the lemongrass. Place the salmon fillet skin side down in the broth and poach over low heat for 10-12 minutes.
Step 4:
Meanwhile, mix the lime juice with the sesame oil, fish sauce and the chopped ginger. Halve the chili pepper lengthwise, remove the seeds, wash and cut into fine rings. Then add to the sauce.
Step 5:
Wash the spring onions and cut into small rings. Wash the herbs, shake dry and pluck off the leaves. Scald the sprouts hot and drain them. Halve the papaya, remove the seeds, peel and cut crosswise into slices. Wash the cucumber, cut in half lengthwise and cut diagonally into long strips.
Step 6:
Take the salmon fillet out of the poaching broth, remove it from the skin and roughly cut it into pieces. Serve the rice with sprouts, salmon and papaya slices. Garnish with the herbs and drizzle with the sauce.
