Preparation:

Step 1:
Peel the onion, cut in half and cut into strips. Peel garlic and ginger and cut into fine cubes. Cut the chili pepper in half lengthwise, remove seeds, wash and chop. Peel and wash the sweet potato. Then cut into 2 cm cubes. Peel and slice the carrots. Halve the bell pepper, remove the seeds, wash and cut into strips.
Step 2:
Heat the oil in a pot. Add onions, garlic, ginger and chili cubes and sauté over medium heat for about 4 minutes. Stir constantly. Add the jerk spice mixture and cook for about 2 minutes. Add carrots, bell bell pepper and sweet potatoes and stir-fry for another 2 minutes. Deglaze with the vegetable broth and let everything cook for 25-30 minutes at low heat.
Step 3:
In the meantime, rinse and drain the beans. Roughly mash half of the beans with a fork and add to the pot along with the other half whole beans. Squeeze lime. Coriander wash, shake dry and pluck off leaves. Season the jerk curry with salt, pepper and lime juice and simmer for another 5 minutes. Sprinkle with coriander leaves and serve.
